Last night, I think I’ve fired about a billion of these babies….chocolate soufflés!
Tickets for soufflés are not to be fired until the server comes and verbally fires it for their table(s). This is the soufflé batter in the ramekin before going into the oven.
There may be times they forget to fire a soufflé. And that is when they are in the shits, keeping their table waiting and waiting. It’s happened with servers mostly in the beginning. The soufflé system sometimes confuses newer servers in the beginning.
Sometimes, servers will trade the order of soufflés according to the readiness of their tables. If a table with a soufflé about to come out is not ready and are still eating, but another table (for another server) is done eating and ready for dessert, a trade is the way to go.
There are times when people are just simply not ready for soufflés. They are the incredibly slow eaters. Hey, I am one of them lol. I eat pretty slow too. I like to take my time and relish my meals, which is why I am so bad at eating on the run. Anyways, with these slow eaters, it becomes a dilemma too. We can’t keep the soufflé in the oven forever. Sometimes they take more than 10-15 minutes longer than expected to finish eating their entrees. And if a soufflé is kept in the oven for too long, it is just basically destroyed. I once had a table taking FOREVER to finish eating. The soufflés had been in the oven way too long and I had to take them out. I kept waiting and waiting but those people were getting nowhere near to being done with the previous course. And well…the soufflés basically collapsed and exploded, looked like a total mess. We couldn’t serve f*cked up soufflés, so I had to fire new ones. The overcooked soufflés tasted like burnt chocolate. It didn’t taste too bad, but looked really…….ugly.
The other week, I had a sudden craving for a chocolate soufflé. I rarely ever eat the things that I am working with on a daily basis, but every once in a while, I do get a craving for a chocolate soufflé. It’s like maybe twice a year. I mean, with dishes I am around, inhaling, tasting, all the time, I just don’t really crave them regularly. Sometimes the sight and smell of everything sickens me, no matter how tasty the dishes may be. If I wasn’t around them so much, a lot of them dishes would probably be things that I’d crave more often than not.
Anyhow….I just had to satiate my soufflé craving, so I made one for myself. It’s really light and airy..and as big as my head.
I can never enjoy a soufflé for myself though. The servers, runners, bussers will all come by and dig in with me. Haha but being a germaphobe, after they dig into it, that’s when I’ve had my last bite. Miss Kim does not share a plate. Luckily at the time, I’ve already had plenty and was done anyway.
I should probably make a soufflé for myself at home whenever I get a craving so I can eat one without others digging into my plate. I think the last time I made a soufflé at home was a frozen one. I made a frozen green tea soufflé. It was really delish. I love green tea.
Whether it’s frozen or hot, a beautiful soufflé is well risen, light and airy. Proper whipping of the egg whites and yolks needs to be mastered in order for the soufflés to rise to perfection.
Like everyone else, I’ll be watching the Oscars tonight. And it is because of Oscar’s night that I get a three day weekend. Yay! Thank you, Oscars. The restaurant will be so dead, with everyone at home (or maybe restaurants with a TV) watching the biggest night for the movie industry. So we will be closing. And of course, I have my regular Monday and Tuesday off. I feel so giddy and relaxed. It almost feels like a mini-vacay. I don’t even know what to do first.
Right now, I am just enjoying a lazy Sunday afternoon, soon evening. Gosh. I haven’t had one of these since the Super Bowl (when we closed that night as well). Sundays are like Fridays for me (for those that have a normal working schedule working weekdays). It’s the last day of the week, I can’t wait to get home and just look forward to the weekend.
Kitchen work is a young person’s job haha. Sometimes, I feel like I am getting too old for all them physical labor. I am not young as I used to be. At the end of the week, I feel worn out and sore….not like unbearably, in pain sore, but more like “whew I think I’ve burned enough calories and worked various muscles for the week” kind of sore. And I just want to do nothing but bum around for the day.
